A nutritious diet comprises of five servings of fruits everyday. Eating fruits is also abest way to keep oneself hydrated during the holy month of Ramazan. Different varieties of seasonal fruits have already made their appearances in fruit markets and grocery stores. You can make several types of delicious cool summer fruit desserts to complete your Ramazan table.
Here is a collection of easy to make desserts and sweets. Try it.
Banana Rasayana:
Ingredients:
-- Elaichibananas - 5 (or two regular ripen bananas).
-- Grated fresh coconut-1/4 cup.
-- Cardamom powder-1/4 tsp.
-- Jiggery(grated)/Brown sugar/ white sugar - 4 tbsp.
-- Honey- 2tbsp
-- Chopped nuts- 2 tbspalmonds, cashews and raisins.
Method:
1. Chop bananas into small pieces after removing the peel. Transfer the chopped bananas into a bowl.
2. Add grated jaggery to the banana pieces.
3. Add grated coconut with cardamom powder, honey and mix well.
4. Just before serving garnish with chopped nuts.
5. Serve it chilled.
Strawberry Shake:
Ingredients:
-- 1/2 kilo fresh strawberries, plus more to garnish
-- 2 tablespoons white sugar
-- 1 teaspoon vanilla extract
-- 3/4 to 1 cup whole milk
-- 1 pint strawberry ice cream
Method:
1-. Wash the strawberries and slice them. Sprinkle the sugar over them and stir in the vanilla. Put the strawberries in the freezer for about an hour.
2-. Put two-pint glasses (or four smaller glasses) in the freezer to chill.
3. When the strawberries have frozen solid, pull them out and put them in the blender with 3/4 cup milk. Blend until the strawberries are minced.
4. Add regular powdered milk to enhance a bit of richness and creaminess.
5-. Take the blender jar off the motor, and add the entire ice cream. Stir it into the milk and strawberries by hand. Put the jar back on the motor and blend thoroughly. Stir or shake if necessary.
6. Pour the milkshake out into the chilled glasses and add ice cubes
7. Garnish with strawberries.
Fruit Salad:
Ingredients:
-- 1/2 cup mango chopped
-- 1/2 cup strawberry chopped
-- 1/2 cup apple chopped
-- 1/2 cup banana chopped
-- 1/2 cup pears chopped
-- 2 tbspblueberries
-- 10-12 mint leaves
-- 2 tbsphoney
-- 2 tbsplemon juice
-- 1/4 tsproasted cumin powder
Method:
1. Add all the ingredients in a bowl.
2. Mix well.
3. Refrigerate for 15 minutes.
4. Serve chilled.
PineappleIce cream:
Ingredients:
-- 2 cups (500 mL) pineapple, cut into 1-inch cubes
-- 1 tsp (5 mL) pure vanilla extract
-- 10 oz (300 mL) sweetened condensed milk
-- 2 cups (500 mL) whipping cream
Method:
1. In a medium-sized bowl, mix together pineapple and vanilla extract.
2. Pour the pineapple mixture into a blender and blend to an applesauce consistency (you can leave it chunkier if you prefer).
3. In a large bowl, stir the pineapple mixture into the condensed milk. Set aside.
4. In a large, chilled bowl (I used my stand mixer bowl), beat the whipping cream until stiff peaks form.
5. Gently stir about 1 cup of the whipped cream into the pineapple mixture until well mixed.
6. Fold the remaining whipped cream into the pineapple mixture.
7. Scrape the entire mixture into a large plastic container, cover with lid, and freeze overnight.
Pineapple Bsundi:
-- 2 tbsp - chopped pineapple for garnishing
-- 1 tsp - elaichi (cardamom) powder
-- 1 tbsp - sugar
-- 2 tbsp - badam (almonds) finely chopped
-- 1 cup - fresh pineapple grated
-- Few strands - (saffron)
-- 3 cups (450ml) - milk
-- 1/2 cup (100 gm) condensedmilk
Method:
1. Mix together condensedmilk and milk. Add the saffron and keep chilled.
2. Heat the grated pineapple and sugar together, cook for 5 minutes stirring well. Cool and mix with the milk mixture.
3. Add the chopped almonds and cardamom powder mix well and chill. Serve cold, garnished with the chopped pineapple.
