Make this Ramadan a healthy affair with a wide range of recipes to break your fast. Plan your Iftar and Suhoor based on a balanced diet. Here are few delicious and easy recipes which will add variety and nutrition to your every meal during the month of Ramadan.

Meat Croquettes

Meat (chicken/beef/mutton): 2 cups (diced and cooked)

Oil: for frying

Onion: 1/4 cup, chopped

Celery: 3 tbsp

Capsicum: 1 tbsp

Parsley: 1tbsp, minced

Paprika: 1tsps

Salt: To taste

Black pepper Powder: 1/4 tbsp

Lemon juice: 2tbsps

Fresh bread crumbs: 2 cups

Eggs: 2

Sauté onions in oil until light golden and translucent. Combine all ingredients except bread crumbs and eggs. Chill the mixture, fold croquettes in egg and then breadcrumbs. Fry until all sliced are brown.

Tex Max Chili Pasta

Vegetable oil: 1 tbsp

Minced beef: 600 g

Onion: 1 large, chopped

Red bell pepper: 2 medium, chopped

Garlic cloves: 6

Tomato paste: 2 tbsp

Chili powder: 2 tbsp

Cocoa powder: 1 tsp

Cinnamon: 1 tsp

Hot water: 3 cup

Chicken stock: 2 cubes/20 g

Tomatoes: 400 g, crushed

Red beans: 400 g

Cheddar cheese: 1 cup

Penne pasta: 3 cups

In a sauce pan, sauté meat with all other spices and veggies. Add water and chicken stock and simmer until meat get tender. Boil Penne pasta in hot water.

Place boiled Penne pasta in a large casserole dish, cover it with the meat sauce. Sprinkle Cheddar Cheese on top, bake in an oven for 15-20minutes until the cheese is melted on top.

Meat Balls

Cooked beef mince: 250 g

Egg: 1 whisked

Plain flour & soft breadcrumbs

Finely chopped fresh parsley: 1 tbsp

Coating

Plain flour: 125 ml

Egg: 1 whisked

Dry breadcrumbs

Oil: for shallow-frying

Mix all the ingredients for the meatballs & divide them into lemon-size portions. Coat each ball in flour first, then in the egg & finally in the breadcrumbs.

Refrigerate for at least 15 minutes, allowing the balls to set well. Deep-fry in medium oil till golden brown.

Chocolate Mug Cake

Flour: 2 tbsp or 1/4 cup

Sugar: 1/2 cup

Cocoa powder: 1/4 cup

Milk: 1/4 cup

Canola oil: 1/4 cup

Egg: 1

Baking powder: 1/4 tsp

Salt a pinch

Vanilla extract: 1/2 tsp

Mix all ingredients in a microwave mug and microwave for 3-4minutes.

BBQ Chicken Pizza

Whole wheat pita bread

BBQ sauce

Mozzarella cheese

Onion

Cooked chicken

Use a whole-wheat pita as the crust, and top with barbecue sauce, onion, mozzarella, and precooked chicken (leftover can work too). Microwave until the cheese is perfectly melted.
